This recipe is good, easy and inexpensive - and since it's always nice to have a few good vegetarian recipes, I have a feeling it will end up on my list of favorites....
Ingredients:
- salsa
- tomato sauce
- canned black beans, rinsed and drained
- canned whole-kernel corn, drained
- fresh cilantro leaves
- flour tortillas
- shredded Monterey Jack Cheese
Directions:
- Spray pan with nonstick cooking spray.
- In small bowl, mix salsa and tomato sauce.
- In medium bowl, mix black beans, corn and cilantro.
- Place one layer of tortillas in pan.
- Spread one-third of salsa mixture over tortilla.
- Top with one-third bean mixture and one-third of cheese.
- Repeat layering 2 more times, ending with last tortilla.
Bake at 425* until cheese has melted and filling is hot.
Serve with iceberg lettuce and sour cream or ranch dressing.
